About oats kheer

Oats kheer, also known as oats pudding or oats payasam. I familiarized myself with this recipe through my sister. She eats that pudding for breakfast to get fibre, as she suffers from a digestive problem, as suggested by her doctor. But she makes it with oats and milk because she doesn’t like the sugar in that.

But one day I feel why didn’t I experiment with adding some other ingredients, maybe it would be better or worse, and guys, you won’t believe it turns truly AMAZING. It tastes similar to sweet daliya (broken wheat porridge), as my siblings said, and truly, I feel the same. Now, my sister is a big fan and likes the way I’m sharing with you today rather than her old way.

This is a simpler and quicker dish than anyone thinks. First, lightly roast the oats in ghee, then slow-cook in milk until soft and slightly thickened. Now, add some chopped nuts for crunch and flavor with cardamom powder for aroma. In some versions, the oats are cooked in water first, then simmered with milk, but cooking with milk directly gives a rich, creamy texture like pudding.

My family members are big fans of eating kheer, except my mother. Rice kheer, carrot kheer, suji kheer, and sabudana kheer are their favorite ones, and now this oats kheer has also been added to their favorite list. You can also serve your family members, and they will like them, sure!

Ingredients

» Oats- I have used the rolled oats; they give a creamy texture. While you can use the quick oats for faster cooking, rolled oats work best.

» Milk- Full-fat milk creates a rich, creamy kheer; instead, you can use low-fat milk for a lighter version.

» Sugar- Use regular white sugar for a classic taste or jaggery for a deeper sweetness. If using jaggery, add it after the kheer has cooked to prevent the kheer from curdling.

» Nuts- I have used the chopped almonds, cashews, and raisins. You can add more to your choice.

» Cardamom powder- This adds a warm aroma that complements the oats kheer beautifully.

How to make oats kheer recipe

1. Heat one tablespoon of ghee in a cauldron or a pan on medium heat.

2. Add 1/2 cup of rolled oats to the heated ghee and roast it until aromatic.

3. After a minute, it is roasted and has a light golden color.

4. Now pour 1.5 cups of milk into it.

5. Add 1/2 cup of white sugar and mix well, and cook on low heat.

6. Simmered it until the sugar dissolved properly and the oats got softened.

7. When they reach that stage, add chopped nuts and 1 tsp cardamom powder to it.

8. Mix well, and it starts thickening. Here, immediately turn off the flame.

Serve the oats payasam warm with a garnish of chopped nuts after lunch and dinner. You can enjoy it at the festivals and the special occasions. For a festive touch, add besan ladoo, moong dal halwa, jaggery rice, and besan barfi to your list as a sweet treat.

Pro Tips

  • Roast the nuts for a minute before adding milk to enhance their nutty flavor.
  • Cook over low to medium heat for a creamy and smooth texture.
  • Stir frequently to prevent the milk from sticking to the bottom of the pan.
  • Adjust the sweetness according to your preference by adding more or less.
  • Avoid overcooking the kheer; cook just until the oats are soft.
  • After cooling, the kheer thickens naturally; you can adjust it by adding a little warm milk before serving.
  • Add nuts and raisins only after the oats are cooked to maintain their texture.
  • You can chill this oats kheer for a few hours if you prefer a thicker dessert.
  • For a festive touch, add some saffron strands soaked in the warm milk.
  • You can refrigerate it for 1 to 2 days in an airtight container, but consuming it on the same day is best.
