About Suji Kheer
Suji kheer is also known as semolina pudding, rava kheer, or rava payasam. This is a simple pudding that starts with roasting rava in ghee (clarified butter) until aromatic. After that, cook it with whole milk, sugar, and chopped nuts. Sometimes it is flavored by the green cardamom powder, which is what the suji kheer recipe is.
However, I’m not a big fan of it like rice kheer and simple carrot kheer, but I used to make it when I wanted to suppress my sweet cravings instantly. I got introduced to this recipe from my mother, she says, ” Shoot, this recipe for your blog, it would be worth it. So today I’m sharing this delicious recipe with you!
This suji kheer recipe is a traditional pudding that is usually prepared on occasions like Holi and Diwali, and is also a great option for giving a fasting treat to yourself. It is also recommended that this pudding is good for infants who are above 1 year old, to provide proper nutrition. It is easily digestible, rich in nutrients that support their overall growth, and also filling at the same time.
I always make this suji kheer recipe to a thick and creamy consistency like pudding. Whether it all depends on personal taste preferences. You can prepare it in a thin consistency by adding more milk. Both consistencies work well, and you can go with either.
Ingredients
Semolina- I used the fine, unroasted rava for this suji kheer recipe. Medium coarse rava is also good to use. You can use roasted rava to skip the step of roasting suji.
Milk- I used whole, full-fat milk for a rich and creamier consistency.
Sugar- White sugar, brown sugar, and white sugar powder can all be used. Even if you want a healthier option, you can use jaggery too.
Ghee- I used homemade ghee for a richer taste.
Nuts- Chopped almonds, cashews, pistachios, and raisins can all be used to your choice.
How to make suji kheer recipe
1. Take a thick-bottomed pan or a saucepan that you have and heat 1 tablespoon of ghee on medium heat.

2. Now add half a cup of rava (sooji) to the heated ghee and roast it until fragrant.

3. Roast it until light golden and aromatic. It takes 3 to 4 minutes on low heat. Remember when roasting the rava, it doesn’t turn brown; it should be golden. Roasting helps the kheer to get a perfect texture.

4. Now pour 2 cups of whole milk into it.

5. Mix well with a spoon and simmer it on low heat until thick and creamy.

6. When it gets thick and creamy, add half a cup of sugar to it. You can add less according to your taste. If you want a thin consistency, add more milk here and simmer.

7. Mix well and simmer until the sugar dissolves properly.

8. When the sugar is mixed properly, add chopped almonds, pistachios, cashews, and raisins. Mix all well. You can add some cardamom powder here to enhance the flavor.

9. Now turn off the flame, and the suji kheer recipe is ready to serve.
