Tinde is a healthy vegetable which is known as the apple gourd, Indian round gourd, or baby pumpkin. Sabji means cooked with aromatic spices. The tinde ki sabji recipe is prepared with sliced apple gourd, onion base, and simple spices, and cooked until they are soft and flavorful.

This recipe can be prepared in many versions, like dry, gravy, or stuffed (bharva tinde). Dry, which I am sharing with you today. Gravy in which an apple gourd is cooked with an onion, tomato base, and yoghurt for a flavorful gravy version. Stuffed version in which the apple gourds are stuffed with spices and then cooked in oil. All versions are good in their place, but if you want a quick one without less hustle, the dry version is the perfect option.

Ingredients

Apple Gourd- Use small, fresh tinde (apple gourds) for the best flavour and texture.

Onion- Make an onion base to combine the ingredients and make it more flavorful.

Spices- Basic spices used in this recipe, like turmeric powder, coriander powder, red chilli powder, and garma masala powder.

Oil- Mustard oil is used here, or you can use any vegetable oil.

Water- Used a tablespoon of water to cook the sabji.

How to make tinde ki sabji recipe

1. Take 7 to 8 small apple gourds in a bowl and wash them in clean water.

2. Now slice them into equal pieces in a bowl or a plate.

3. Heat 1 to 1.5 tbsp of oil in a pressure cooker on medium heat. Add some cumin seeds to sizzle.

4. After adding onion paste and sauteing it till light golden.

5. When it gets golden season spices: 1 tsp coriander powder, 1/2 tsp turmeric powder, 1/2 tsp red chilli powder, 1/4 tsp garam masala powder, and 1 tsp salt.

6. Mix and saute all together for a minute.

7. Now add sliced apple gourds to the sauteed spices.

8. Pour 1 tbsp of water and mix all the ingredients well.

9. Now cover the pressure cooker lid and cook it on high heat for two whistles. After that, turn off the flame.

10. When the pressure calms down, naturally open the lid, and the tinde ki sabji is completely cooked.

Serve this tinde ki sabji recipe hot with simple chapati/roti, paratha, or even steamed rice. You can also serve it with a side of cucumber raita or boondi raita. Masala chaas is also a good side to make it a complete meal.

Ingredients
  

  • 7-8 tinde (apple gourd)
  • 4 medium onions, paste/grated
  • 2 tbsp oil
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • ½ tsp turmeric powder
  • 1 tsp salt
  • ¼ tsp garam masala powder
  • 1 tbsp water

Instructions
 

  • Take an apple gourd and wash it in clean water, peel its skin.
  • Now slice them into equal sizes in a bowl.
  • Heat oil in a pressure cooker with cumin seeds on medium heat.
  • When the cumin seeds start sizzling, add the onion paste.
  • Saute for a minute, then add all spices.
  • Now saute all together for a minute too.
  • After that, add sliced bottle gourd and water.
  • Mix all the ingredients well, cover the cooker lid.
  • Cook on high heat for two whistles, then turn off the flame.
  • When pressure is released, the sabji is completely cooked.
  • Serve it hot with roti or paratha.
