- 7-8 tinde (apple gourd)
- 4 medium onions, paste/grated
- 2 tbsp oil
- 1 tsp cumin seeds
- 1 tsp coriander powder
- ½ tsp turmeric powder
- 1 tsp salt
- ¼ tsp garam masala powder
- 1 tbsp water
Take an apple gourd and wash it in clean water, peel its skin.
Now slice them into equal sizes in a bowl.
Heat oil in a pressure cooker with cumin seeds on medium heat.
When the cumin seeds start sizzling, add the onion paste.
Saute for a minute, then add all spices.
Now saute all together for a minute too.
After that, add sliced bottle gourd and water.
Mix all the ingredients well, cover the cooker lid.
Cook on high heat for two whistles, then turn off the flame.
When pressure is released, the sabji is completely cooked.
Serve it hot with roti or paratha.
- Choose small to medium and fresh round gourds for better taste.
- Avoid using overripe or large apple gourds, as they can taste bland.
- Peel lightly and evenly cut all slices for uniform cooking.
- Avoid adding too much water for dry sabzi; one tablespoon is enough for cooking.
- You can add some cilantro for some freshness.
