About dahi tadka recipe
Dahi is a Hindi word for yoghurt or curd, and tadka refers to tempering prepared with ghee, onion, garlic, curry leaves, and other spices. Here, the fresh curd is whisked until smooth and finished with a flavorful tempering.
This can be made with the both thin and thick consistency, where if made as a thin it called a dahi tikhari which is the most popular in South India. But if prepared as a thick consistency, it is generally called as dahi ka tadka.
However, this recipe doesn’t contain a long heating process except for the tadka. In other variations, the curd is cooked over heat in the tempering, but my recipe is simple, in which the tadka is added over the curd.
Also, heating curd should be avoided to prevent it from curdling or becoming sour. So, it is better to add the tadka when it is slightly cool, which helps to maintain the taste and prevent it from becoming tangy.
I rarely eat plain curd in my meal, so I always try to make it flavorful, sometimes with simple cumin seeds and oil tempering, while on some days with the addition of cumin and mint powder.
And now this dahi tadka is added to my list when I want an extra flavour boost. I was inspired by Pinterest to post this recipe on my blog. First, I tried it and found it amazing, then thought, why not share it here?
