There are different ways to make this savory vermicelli, and one is with simple tempering and vermicelli. The other is loaded with vegetables, like we make pulao; it gives that exact flavor. But my recipe uses the first way, which I like most, so I’m using only potato in that.
Jave is made in both sweet and savory variations. One is sweet vermicelli (Meethe Jave), slow-cooked in milk until it has a fine, creamy, thick texture; that’s also become a hearty breakfast if you have a sweet craving in the morning.
The second is savory vermicelli (Namkeen Jave), made with vegetables, green chili, and basic spices, and cooked until tender and fluffy, which I’m sharing with you today.
Jave is made with these: wheat flour, fine flour, or semolina dough. I always see my mother prepare it by herself and dry it in the sunshine. She doesn’t buy it from the market because she does not like the taste of market vermicelli. But I always prefer to buy it from the market, which saves time.
Ingredients
- Vermicelli- I use roasted semolina vermicelli; if you’re using unroasted, roast it in ghee until light golden.
- Cumin seeds- Used for tempering; instead, you can use mustard seeds.
- Onion- I used a medium, thinly chopped red onion.
- Potato- I used one medium potato, thinly sliced into small pieces.
- Green chili- Using them for heat; you can use red chili powder instead.
- Turmeric powder- Used for color.
- Salt- I have used regular white salt.
- Oil- I used mustard oil, but you can use ghee too.
- Water- Used for cooking vermicelli.
How to make Namkeen Jave Recipe
1. I take 1 cup of roasted vermicelli; if you are using homemade vermicelli, roast 1 cup of vermicelli by adding 1 tbsp ghee in a pan on medium flame. Roast until brown; this takes roughly 6-8 minutes.

2. Now, in the pan or kadai, add 1 tbsp mustard oil with 1 tsp cumin seeds on medium heat. Let them sizzle for a few seconds.

3. When the cumin seeds start to sizzle, add chopped onions.

4. Sauté them until they turn translucent or light golden.

5. When the onions are golden, add chopped potato and green chilies.

6. Now sauté them for a minute so that they absorb the flavours properly.

7. After a minute, add 1/2 tsp of turmeric powder and 1 tsp of salt. Also add 2 tbsp water.

8. Mix all of them well and cover the kadai with a steamer and cook the potatoes on low heat until they are half soft.

8. It takes 3 to 4 minutes to get the potatoes half done.

9. Now add the vermicelli.

10. Again, pour 1.5 cups of water so the vermicelli is covered properly. Mix well and cook on low heat until the vermicelli softens.

11. Stir in between so that the vermicelli does not stick to the bottom of the pan.

12. When the water is absorbed properly and the vermicelli texture is fluffy and soft, turn off the heat.
