Daliya or dalia, also known as broken wheat, is a highly nutritious and fibre rich versaltile food made by cracking whole wheat kernels. It is one of the popular foods of India, which is made in several variations porriadge (sweet dalia), savoury khichdi, upma, or sometimes added to soups. It is also used for weight loss and improving digestion.

Now talk about the vegetable daliya recipe or daliya khichdi. It’s a savoury dish of broken wheat where it is tempered with onion, tomatoes and vegetables like potato, green peas, carrot, capsicum, and many more. All together cooked in a pressure cooker until soft and fluffy. It is also made in porridge consistency, which depends on one’s choice. I like the fluffy consistency where the grains are separated.

The dalia is made in two versions: sweet and savoury. In this post, I’ll show you the savoury version and how to make it perfect. Sweet daliya, in which first broken wheat is roasted in ghee, then cooked in milk, sugar, and dry fruits until a rich and creamy consistency is achieved. Lastly, flavoured with cardamom powder for an aromatic taste. This is also a good dish to try if you want something healthy and delicious at the same time.

Ingredients

Broken Wheat- There are three types of broken wheat available in the market: fine, medium, or coarse broken wheat. Fine to medium broken wheat is used to make porridge or khichdi. I used fine broken wheat in this recipe.

Vegetables- I used onion, tomato, potato, and green peas here. Frozen peas also work well. You can add more veggies to your choice, like carrots, beans, capsicum, and cauliflower.

Tempering- Cumin seeds

Green chillies- I used green chillies here; you can use red chilli powder instead.

Ginger paste- Make the paste of it in a mortar and pestle, or you can grate it. You can add some garlic cloves for more flavour.

Ghee- Homemade is best to use in this recipe. Store-bought ghee can also be used, but make sure it is of good quality.

Water- I used 3 cups of water for a soft or fluffy consistency. If you want a porridge-like consistency, then use 4 cups of water.

How to make a vegetable daliya recipe

1. Wash, peel and chop all the vegetables into evenly sliced pieces.

2. Take 1 cup broken wheat in a bowl and rinse it in clean water 2 to 3 times. Remove excess water from them by using a strainer.

3. Heat 1 tbsp ghee in a 3-litre pressure cooker on the stove on low to medium heat.

4. Add 1 tsp cumin seeds to sizzle until golden.

5. Now add chopped onion and saute till soft and golden.

6. Add ginger paste and chopped green chillies. SautΓ© them for a few seconds.

7. After that, add chopped tomatoes to it. SautΓ© till they are soft and the raw smell of them is gone.

8. Add all the chopped vegetables.

9. SautΓ© all of them for a minute on medium heat.

10. After a minute, add the washed broken wheat to them.

11. Pour 2 cups of water and 1 tsp of salt into it.

12. Mix all the ingredients well and cover the cooker lid. Pressure cook for 2 whistles on high heat, after that cook on low flame for 5 minutes. Then turn off the flame. Let the pressure release naturally.

13. When the pressure drops, open the lid, and the broken wheat or vegetables are completely cooked. If not, add some water and pressure cook again for 1 whistle.

14. Fluff gently; you can add some coriander leaves for some freshness.

Serve vegetable daliya hot or warm for the best taste and texture. It makes a complete meal on its own, but you can pair it with boondi raita.

Ingredients
  

  • 1 cup broken wheat
  • 1 tbsp ghee
  • 1 tsp cumin seeds
  • 1 medium onion
  • 1 medium tomato
  • 1 medium potato
  • 2 green chilies
  • ΒΌ cup green peas
  • 1 tsp salt
  • 3 cups water

Instructions
 

  • Chop all the vegetables evenly.
  • Rinse the broken wheat in clean water 2 to 3 times.
  • After rinsing, remove the excess water through a strainer.
  • Heat ghee in a pressure cooker with cumin seeds.
  • When they start sizzling, add chopped onion to them. Saute till light golden.
  • Then add chopped tomatoes, and saute until soft.
  • Now add chopped vegetables and saute them for a minute.
  • After that, add broken wheat, water, and salt. Mix all the ingredients well.
  • Close the lid and cook for 2 whistles. After that, cook on a low flame for 5 minutes.
  • After 5 minutes turn off the flame. Release the pressure naturally.
  • Open the lid, fluff gently, and serve.
