What is suji upma?
Suji (cream of wheat) is a coarse flour made from wheat grains. Upma is prepared from roasted semolina, tempered spices, and vegetables. That’s together called suji upma. It’s a popular dish of South India, but now spread across the country. This rava upma is also known as rava uppittu. From restaurants to every home, it now holds a place on people’s breakfast menus. One person is me from them.
Mornings are the busiest time for all people. Everyone wants a quick and easy recipe that saves time. My mother usually prepares rava upma for breakfast because she goes to work daily. I follow & prefer the same thing. The most loved breakfasts in my home are poha, suji chilla, besan chilla, and recently added upma. I feel they all save time. The suji upma recipe is so easy that anyone can try it by following the steps below!

Ingredients
- Rava (Semolina)- Use fine semolina for this suji upma recipe. The grains of this are perfect for puddings, giving you a perfect soft & fluffy texture.
- Oil- I use mustard oil, but any neutral oil can be used.
- Tempering- Cumin seeds, urad dal, chana dal, and dried red chilies.
- Veggies- I used onion and tomato in this recipe. If you want to add more green peas, beans, and carrots to make it more flavorful.
- Green chili- I like to add them to all recipes. If you like red chili, then replace them.
- Water- It helps cook the rava and veggies into a perfect texture.
- Ghee- It enhances the flavor of the recipe. Optional, but I must add this.
How to make suji upma recipe
1. Take 1 cup of semolina in a kadai and roast it on medium heat till aromatic.

2. When it’s aromatic, transfer it to a bowl to cool down.

3. Temper cumin seeds, urad dal, chana dal, and dried red chilies. Let them crackle.

4. Add chopped onion and saute till light golden.

5. When the onion reaches a golden color, add chopped tomato or green chilies to it.

6. Sauté them till they are soft and mushy.

7. Pour 3 cups of water and 1 tsp of salt.

8. Cook till comes to a boil.

9. When the boil comes, add roasted semolina to it by stirring continuously to prevent lumps in the suji. Cover the lid and cook 3 to 4 minutes till suji absorbs the water.

10. After 4 minutes, the water absorbs properly.

11. Add 1 tbsp of ghee to it and mix well. Turn off the flame. The suji upma recipe is ready.

Serving & Storage
Serve this suji upma recipe hot for breakfast with a cup of tea. You can serve it with a squeeze of lemon juice, along with coconut chutney and pickle. A bowl of yogurt also goes well with it to make a more classic dish.
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat it before serving, and add a little water to prevent drying. I personally prefer to make it fresh every time you eat!

Pro Tips
- You can pre-roast the rava until fragrant, then cool completely. Store in an air-tight container for up to a month to save time.
- Roast the rava for 4 to 5 minutes to avoid sticking.
- Use rava and water in a 1:3 ratio. You need 3 cups of water for 1 cup of rava, which is the perfect ratio to make it moist and fluffy together.
- To avoid lumps, stir the rava and water continuously.
- At last, add ghee for a rich flavor to the suji upma recipe.
Variations
1. Vegetable Upma- Add green peas, carrot, beans, and cauliflower to make it healthier.
2. Lemon Upma- When it warms, squeeze a lemon on it for a sour flavor.
3. Sweet Upma- Add 1 to 2 refined sugars for sweet upma.
4. Peanut Upma- Roasted peanuts are added to make a crunchy flavor.
5. Coconut Upma- Grated coconut is added at the end of cooking for coconut flavor.

Suji Upma Recipe | Soft & Fluffy Rava Upma in 20 Minutes
Ingredients
- 1 cup sooji (semolina)
- 1 tbsp oil/ghee
- ¼ tsp cumin seeds
- ⅛ tsp urad dal
- 2 dried red chilies
- 1 onion, chopped
- 1 tomato, chopped
- 2 green chilies, chopped
- 1 tsp salt or required
- 3 cups water
Instructions
- Roast the semolina in a pan on medium heat until aromatic.
- Heat a kadai, add oil with cumin or mustard seeds, dried chili, and dal. Let them crackle.
- Add chopped onion and green chili saute them till light golden.
- Pour water and salt, wait it comes to a boil.
- When the boil comes, add roasted semolina, stirring continuously.
- Stir it well so that there are no lumps in the semolina.
- Cover the kadai with a steamer and cook for 5 minutes.
- Now garnish with chopped coriander leaves.
- Serve it hot with pickle or coconut chutney.
