Panjiri Recipe | Healthy & Nutritious
Panjiri recipe is a healthy and nutritious sweet dish prepared with roasted wheat flour in ghee, chopped nuts, dry coconut, and flavored with sugar powder. It’s a common and popular one with several health benefits. Mostly it is prepared in winter with its warm quality, but it can be enjoyed in all seasons. Light sugar in roasted wheat flour both together are perfect combination to enjoy with the cup of warm milk.

About Panjiri Recipe
I was introduced to this panjiri recipe in my early childhood. My mother makes it every Monday as a prasad to worship Lord Shiva. She fasts the whole day and in the evening opens the fast with panjiri and a cup of milk. Now I do the same process when I fast on Monday.
Panjiri or the another name is “kasaar,” is what we call it in our local language. This is a traditional sweet dish of North India because it is prepared on many occasions, like Janmasthmi, lord satyanarayan pooja, worship of lord shiva, and worship of Goddess Laxmi.
Apart from the traditions, we can enjoy it any time because it gives several health benefits, like keeping your body healthy, as it is made from wholesome ingredients. You can give this to anyone in winter to keep their body warm, and most importantly, it tastes amazing!
What is Panjiri Recipe
Panjiri recipe is a roasted process of whole wheat flour (aata) in ghee with the nuts, and lastly sweetened with sugar powder and jaggery. This is the process that I have prepared. But you can also flavored it with suanf powder which tastes more better. I skipped it here because my siblings don’t like its taste.
This is not a time-consuming process; it roughly takes 10-15 minutes only. Very yummy and healthy one. Every Monday we enjoy this, and I think this is the favorite dish of all my family members. Their Monday is never complete without this panjiri recipe.

Ingredients
- Wheat flour (aata)- I used homemade chakki aata here. But market bought is also good. You can also substitute it with semolina (suji) in half quantity. Both measure in equal quantity, then make this. But I make this with whole wheat flour.
 
- Ghee- I used homemade ghee, which tastes better than the market ones. Homemade ghee gives a more aromatic flavor.
 
- Nuts- Almonds and cashews are both used here. Other nuts you can also use to your choice. I like only them. First, saute them in ghee for a nutty aroma, then add them to the recipe.
 
- Dry coconut- Adding grated dry coconut makes this dish more delicious. You can add or skip to your choice.
 
- Sugar- I used raw sugar (jaggery) here to make this dish healthier. Sugar powder and canned sugar can also be used. Remember, when you add sugar, whether it’s raw sugar or not, add it when the panjiri is a little warm. If you add it at the time of roasting, it releases water.
 
How to make Panjiri Recipe
1.First heat 2 tbsp ghee in a kadai on low heat. Add chopped almonds and cashews to it. Roast them till light golden.

2. When the nuts are golden, remove them to a bowl.

3. In the same kadai, add 1 cup of wheat flour to it. Roast it until light golden.

4. Roast it on low to medium heat by stirring it continuously with a spatula.

5. When it changes color to light golden, it means it has roasted properly.

6. Now add roasted nuts and grated dry coconut to it.

7. Mix them well and turn off the heat. Now rest it until it warms. It takes 8 to 10 minutes.

8. When it warms, add 1/2 a half jaggery to it.

9. Again, mix well, and the panjiri recipe is ready.

Serve this panjiri recipe with a cup of warm milk. But you can serve it alone, which also tastes good. You can store this for up to 2 days in air airtight container at room temperature.

Tips
- Always roast the panjiri on low to medium heat. If you roast on high heat, there will be a chance of burning the panjiri.
 
- You can make this with semolina in half and half quantity wheat flour and semolina.
 
- Raw sugar and canned sugar, you can use any one of them.
 
- When you add the sugar in panjiri, add it when it is still warm.
 

Panjiri Recipe
Ingredients
- 1 cup wheat flour
 - ½ cup jaggery
 - 2 tbsp ghee
 - 1 tbsp chopped nuts
 - 1 tbsp dry coconut
 
Instructions
- Heat ghee in a kadai and roast the chopped nuts until light golden.
 - In the same kadai add 1 cup of wheat flour in it.
 - Roast and stir it on low to medium heat until it changes color.
 - When the wheat flour changes its color from white to golden add all chopped nuts to it. Mix well.
 - Now turn off the heat and let it warm for 10 minutes.
 - Then add jaggery to it and mix well. The panjiri is ready.
 
Notes
- Roast the panjiri on low to medium heat. High heat will burn the panjiri.
 
- You can make this in half and half quantity of wheat flour and semolina.
 
- You can use any one of them, raw sugar or canned sugar.
 
- Add sugar when the panjiri is warm.
