What is Namkeen Jave?

Namkeen jave is also known as savory vermicelli. It’s a north Indian staple but served across all the states. This is a good and healthy breakfast for everyone, which needs simple, everyday ingredients and takes a few minutes to cook. If you are in a hurry, try this easy, quick recipe.

Jave is made with any of these wheat flour, fine flour, and semolina dough. I always see my mother preparing it by herself and drying it in the sunshine. She doesn’t buy it from the market because she does not like the taste of market vermicelli. By profession, she is a teacher, but she always saves time because she enjoys doing it. When I was a kid, I enjoyed this process, but now I feel too lazy to do all this stuff. I prefer to buy it from the market, which saves time.

Jave is made in both sweet and savory variations. One is sweet vermicelli (Meethe jave), which needs vermicelli, sugar, and nuts altogether, slow-cooked in milk until it has a fine, creamy, thick texture. The second is savory vermicelli (Namkeen Jave Recipe), made with vegetables, green chili, and basic spices, and is cooked until a fluffy texture.

Ingredients

  • Vermicelli- There are two types of vermicelli available in the market: roasted and unroasted. Purchasing roasted vermicelli saves your roasting time. But if you purchase unroasted roast them with ghee.
  • Cumin seeds- They are enough for tempering.
  • Onion- One onion, cut it into small pieces.
  • Potato- Take a potato and cut in medium thin slices.
  • Green chili- I used 2 green chilies here; you can use red chili powder instead.
  • Oil- I used mustard oil, but you can use ghee too.

Pro Tips

  • Roast the vermicelli properly on medium heat till light golden. Avoid roasting them on high heat.
  • Cut the potato into thin slices. If you cut them into thick slices, they don’t cook properly and remain raw inside.
  • Pour the water that I have mentioned above. Avoid too much water they results in mushy and sticky.
  • After adding water, cook on a low flame; a high flame can overcook and make them soggy.
  • When they are finally cooked, do not overmix them. Just fluff gently.

Variations

1. Peanut Namkeen Jave- Add roasted peanuts while tempering for extra crunch and protein.

2. Lemon Vermicelli- Add fresh lemon juice at the end for a tangy flavor.

3. Vegetable Vermicelli- Include carrot, peas, or capsicum for a more filling meal.

4. Spicy Vermicelli- Increase green chili or add red chili powder for more heat.

5. Ghee Vermicelli- Cook in ghee instead of oil for a richer taste.
