Meethi Mathari
Meethi Mathari is a mouth-watering, crispy, and delightful Indian fried sweet snack. However, this recipe is prepared occasionally, like Holi, Diwali, Karwa Chauth, and Teej. But the essence of this is comforting at all times. I prepare it whenever I feel like tasting little different in my evening. It’s a little bit time-consuming. But it is worth it in the end when you taste and serve it to your loved ones.
This year, at the time of Holi, my mother and I prepared the gunjiya. So with some leftover stuff, we tried to make this meethi mathari, and the result was amazing. Everyone who tasted their reaction was like Wow.
I am telling you this because we always prepare another type of mathari that was made with wheat flour dough. The dough was sweetened with sugar and water syrup. Then, it was deep-fried in oil. We first tried this recipe on Holi. Now I am sharing it with you with a happy heart.
These fluffy and meethi mathari are going to be more delicious for you because you will prepare them for yourself. Stuffing is the best and favourite part of mine and is also the star in this recipe. Without this, the recipe is nothing.
The main thing is to remember here if you want crispy mathari. Make sure when you knead the dough, it should be stiff and tight in texture. If the dough is soft, it won’t give you the crispy taste. The tighter and stiffer the dough, the crunchier the taste of Meethi Mathari.

Ingredients
- Fine flour- I used whole fine flour here to make the dough.
 
- Khoya- Khoya is used for stuffing here. You can use both homemade and store-bought.
 
- Sugar powder- I used white sugar powder here.
 
- Dry Coconut– I used dry coconut here for a more creamy taste.
 
- Nuts- Almonds, cashews, raisins, and lotus seeds are all added to the stuffing. You can add more nuts to your taste.
 
How to make Meethi Mathari
Make Dough
1.Start by taking 1 cup of fine flour in a parat or bowl that you have.

2. Add 2 tbsp of warm ghee to the fine flour (moaun). You can also add warm oil to it.

3. Now mix well with your fingertips and palms. So that the ghee coated well with the fine flour.

4. After that, add water little by little and knead it into tight dough.

5. The dough is ready, and I made it tight and stiff. Leave it for 10 minutes till we make the filling.

Make Stuffing
6. Chop all the nuts that you want to add to your nuts. I add cashews, almonds, raisins, lotus seeds, and grated coconut.

7. Now take khoya in a platter or bowl and make it smooth with your hands.

8. Add 1 cup of sugar powder to it.

9. Now add all the chopped nuts here.

10. Mix all the ingredients well and do a taste test. If you feel the stuffing is less sweet, then add more.

Make Mathari
11. Make small balls from the dough of equal proportion, like this:

12. Take one ball and roll it with a rolling pin about 2 to 3 inches.

13. Now put a spoonful of stuff in the middle of the rolled mathri.

14. Close the edges well by applying a little water to its corners.

15. Now again roll it into a 2-inch diameter. Roll all the rest mathari like this:

Fry Mathari
16. Heat oil in a kadai on medium to high heat. When the oil is heated, add rolled mathari to it one by one.

17. After a minute, flip them with a spatula from the other side.

18. Again, flip them and fry till they are light golden.

19. When they are light golden, remove them witha spatula.

20. Place them on the serving plate and repeat the same process with the rest.

Serve this Meethi mathari in the evening with a cup of masala tea. If you are serving your kids, then serve with tomato ketchup or pickle. They are the best pack for lunch boxes or a long trip.

Ingredients
For Dough
- 1 cup fine flour (maida)
 - 2 tbsp ghee
 - water for kneading dough
 
For Stuffing
- 250 gm khoya
 - 2 tbsp grated dry coconut
 - 2 tbsp chopped almonds & cashews
 - 2 tbsp chopped lotus seeds (makhana)
 - 1 cup white sugar powder
 - oil for frying
 
Instructions
- Take fine flour in a parat and add warm ghee to it, then mix well.
 - Now add water and knead it into tight dough.
 - Prepare stuffing by chopping all the nuts.
 - Then in khoya add white sugar powder and chopped nuts. Mix them well and the filling is ready.
 - After that make small balls from the dough. Then take one ball and roll it in 3-inch diameter.
 - Place 1 teaspoon filling in the middle of mathari. Then close the edges of it with applying some water.
 - Now again roll it in 2-inch diameter.
 - Heat oil in a kadai and add rolled mathari to it.
 - Fry them by flipping from both sides till light golden.
 - When the mathari are light golden remove them with spatula.
