The key ingredient in this recipe is gram flour, also known as “besan” in Hindi. The gram flour is made from splitting brown chickpeas. It is easily available in all Indian grocery stores.

It is a simple and quick barfi that you can make by yourself. No more advanced preparations are needed here; you have some ingredients, and this delicious barfi is on your table.

If I think about any barfi, this comes to my mind first. This barfi has a unique quality that I like the most, it freezes fast rather unlike other barfis. So you don’t a wait long for taste.

First, make a sugar syrup with sugar and water. Boil it to its 1-string consistency, or they help to freeze the barfi properly. Then heat ghee and gram flour in it and roast it until it turns aromatic and golden brown.

After that, mix the roasted gram flour with sugar syrup. Take a tray or platter, grease some ghee it and pour the gram flour into it. Garnish with chopped nuts and rest it for 5 to 10 minutes. Slice with a knife into small pieces.

Ingredients

  • Gram flour- I take one cup of gram flour here.
  • Sugar- I used regular white sugar here.
  • Ghee- I used homemade ghee here. If you use store-bought, check the quality before buying.
  • Nuts- I used almonds and cashews here. But you can add more to your choice.

How to make Besan Barfi Recipe

Make a sugar syrup

1.First, take a pan, add 1 cup of sugar and 1 cup of water to it on medium heat.

2. Bring them to a boil and cook till it has a one-string consistency.

3. After a few minutes, check by taking a drop between your fingertips and separating your fingers. If you see one string come, then your sugar syrup is ready.

4. Now turn off the heat and keep aside the sugar syrup.

Roast Gram flour

5. Take a kadai and heat 7-8 tablespoons of ghee on medium heat.

6. Now add 1 cup of gram flour to it.

7. Mix them well with a spatula and keep stirring.

8. Stir it continuously till it turns golden brown. Keep stirring to help the gram flour not stick to the bottom of the kadai.

9. When the gram flour turns golden brown, it has roasted properly. It takes 10-15 minutes to roast.

10. Now add the sugar syrup to it.

11. Cook it for 1 minute.

12. When they both mix properly. Make a thick paste like this, and it is ready to freeze.

Freeze Besan Barfi

13. Take a platter or tray that you have and grease some ghee. Greasing the ghee at the bottom helps the barfi to come off fast.

14. Pour the mixture onto the platter.

15. Garnish with chopped nuts. Rest it at least 5 minutes. Press gently with a spatula. It helps them to smooth from the top.

16. Rest it for 5 minutes. Then slice it with a knife into pieces.

Make sugar syrup

  • Take 1 cup of sugar and 1 cup of water in a pan on medium heat.
  • Let the sugar dissolves in water and bring them to a boil.
  • Cook it till it has a one string consistency.
  • Take a drop let it cool down and check with your fingetips and seperate gently. If it has string consistency the syrup is ready. Turn off the heat and keep the syrup aside.

Roast Besan

  • Take a kadai and heat 7-8 tablespoons of ghee in it.
  • Add gram flour to it. Mix them very well.
  • Now stir the gram flour continously till iit has golden brown.
  • It takes 10-15 minutes to roast the gram flour properly.
  • Now add the sugar syrup to it.
  • Cook it for 1 minutes. Mix them well and you see a thick mixture.

Freeze Besan Barfi

  • Take a platter and greese some ghee to it.
  • Pour the mixture to it. Garnish chopped nuts to it. Press gently with spatula at the top.
  • Rest it for 5 minutes.
  • Slice it with a knife into peices.
  • Now the besan barfi is ready.
