Easy Corn Rice Recipe – Flavorful One-Pot Meal

Sweet corn is a popular variety of maize and is a highly versatile food that is enjoyed in several ways on the cob, in salad or chaat, in pakoras or soups, and in rice dishes. It is rich in fibre and vitamin C, making it a great addition to your diet.

In the monsoon season, corn comes in bulk in my home, and I prefer to make any dish so that they consume in a better manner. One of my family’s favorites is this corn pulao recipe where the corn kernels are cooked with basmati rice, onion, and spices until soft and tender. Then serve with raita or all alone.

There are many ways to prepare this sweet corn rice: first is Indian-style pulao, which I’m sharing with you today; second is corn fried rice, where the cooked rice is stir-fried with corn kernels and spices; and third is butter corn rice, in which the raw rice is directly cooked with butter corn and soya sauce.

But what I like most is this one-pot corn rice that’s so simple and super quick to make. If you are a beginner or want a quick weeknight dinner or want a comforting meal, this recipe is specially for you. I’m sure after trying this, you want to make it again and again.

Ingredients

Rice- I have used the long-grained basmati rice. If you don’t have it, use another variety, but long-grain rice goes well in this recipe.

Sweet Corn- Fresh sweet corn offers the sweetest flavor, but frozen corn works as well. If using canned corn, drain and rinse well before using.

Onion- Thinly sliced onion adds sweetness and depth of flavor. You can skip them for a no-onion version.

Green Chillies- They are used for mild heat in the recipe. Instead, you can use red chili powder.

Oil- I have used mustard oil for a lighter or vegan version. If you want a rich aroma, you can use ghee.

Whole Spices- Cumin seeds, cloves, cinnamon, and green cardamom for a warm flavour. You can add bay leaf or star anise if you have them.

Spices- Coriander powder or garam masala are used to enhance the rice.

Salt- Rock or regular white salt can both be used.

Water- It is used to cook the pulao.

How to make easy corn rice recipe

1. Wash the rice in clean water and soak for 20 to 30 minutes.

2. Till the rice is soaked, remove the corn kernels from the cob with the knife into a bowl.

3. Now heat one tablespoon of oil with 1 tsp cumin seeds, 2 cloves, 2 green cardamom, and cinnamon in a pressure cooker over medium heat.

4. When they start sizzling, add the sliced onions to them.

5. Sauté them until they have a light golden color and add 1/2 tsp coriander powder or 1/4 tsp garam masala.

6. Now add the 1/3 cup of corn kernels to them.

7. Sauté them for a minute on medium heat.

8. After that, add the soaked rice and chopped green chilies.

9. Pour 1.5 cups of water and 1 tsp of salt.

10. Mix all the ingredients well, cover the lid, and cook on high heat for two whistles, then turn off the flame.

11. When the pressure drops naturally open the lid, and the one pot corn rice is cooked.

12. Fluff gently and serve.

Serving Idea

» Garnish the corn rice with fresh coriander or a squeeze of lemon juice.

» Serve the corn rice hot with boondi raita, cucumber raita, or mint raita for a refreshing meal.

» Pair it with dal tadka for a wholesome meal.

» You can enjoy it with a glass of masala chaas and lassi for a complete meal.

» It also goes well with papad, pickle, or salad for a simple lunch.

Ingredients
  

  • 1 cup basmati rice
  • cup sweet corn kernels
  • 1 medium sliced onion
  • 2 green chilies, finely chopped
  • 1 tbsp oil
  • 1 tsp cumin seeds
  • 2 cloves
  • 2 green cardamom
  • 1 cinnamon
  • ½ tsp coriander powder
  • ¼ tsp garam masala
  • 1 tsp salt
  • cups water

Instructions
 

  • Wash and soak the rice in water for 20 to 30 minutes.
  • After that, heat oil in a pressure cooker with whole spices over medium heat.
  • When they start sizzling, add sliced onion.
  • Saute them until light golden and add garam masala and coriander powder.
  • Now add sweet corn kernels and saute for a minute.
  • After that, add soaked rice and green chilies.
  • Pour water and seasoning salt into them.
  • Mix all the ingredients well and cover with the lid. Cook over high heat for two whistles, then turn off the heat.
  • After releasing the pressure, open the lid, and the corn rice is cooked.
  • Now fluff gently and serve.
