Easy Corn Rice Recipe - Flavorful One-Pot Meal

Ingredients
  

  • 1 cup basmati rice
  • cup sweet corn kernels
  • 1 medium sliced onion
  • 2 green chilies, finely chopped
  • 1 tbsp oil
  • 1 tsp cumin seeds
  • 2 cloves
  • 2 green cardamom
  • 1 cinnamon
  • ½ tsp coriander powder
  • ¼ tsp garam masala
  • 1 tsp salt
  • cups water

Instructions
 

  • Wash and soak the rice in water for 20 to 30 minutes.
  • After that, heat oil in a pressure cooker with whole spices over medium heat.
  • When they start sizzling, add sliced onion.
  • Saute them until light golden and add garam masala and coriander powder.
  • Now add sweet corn kernels and saute for a minute.
  • After that, add soaked rice and green chilies.
  • Pour water and seasoning salt into them.
  • Mix all the ingredients well and cover with the lid. Cook over high heat for two whistles, then turn off the heat.
  • After releasing the pressure, open the lid, and the corn rice is cooked.
  • Now fluff gently and serve.

Notes

  • Always soak the rice for at least 20 minutes before cooking to get long, fluffy grains.
  • Use fresh or frozen sweet corn for the best flavor and texture.
  • Always sauté the corn for 1 to 2 minutes to bring out its natural sweetness.
  • You can add some roasted cashews or peanuts for extra crunch and richness.
  • A splash of lemon juice just before serving to balance the flavors.
