- 1 cup basmati rice
- ⅓ cup sweet corn kernels
- 1 medium sliced onion
- 2 green chilies, finely chopped
- 1 tbsp oil
- 1 tsp cumin seeds
- 2 cloves
- 2 green cardamom
- 1 cinnamon
- ½ tsp coriander powder
- ¼ tsp garam masala
- 1 tsp salt
- 1½ cups water
Wash and soak the rice in water for 20 to 30 minutes.
After that, heat oil in a pressure cooker with whole spices over medium heat.
When they start sizzling, add sliced onion.
Saute them until light golden and add garam masala and coriander powder.
Now add sweet corn kernels and saute for a minute.
After that, add soaked rice and green chilies.
Pour water and seasoning salt into them.
Mix all the ingredients well and cover with the lid. Cook over high heat for two whistles, then turn off the heat.
After releasing the pressure, open the lid, and the corn rice is cooked.
Now fluff gently and serve.
- Always soak the rice for at least 20 minutes before cooking to get long, fluffy grains.
- Use fresh or frozen sweet corn for the best flavor and texture.
- Always sauté the corn for 1 to 2 minutes to bring out its natural sweetness.
