About Aam Panna
Aam means mango, and Panna means a tangy drink, so the drink is called the mango tangy drink. This traditional aam panna is a North Indian drink mostly consumed during the peak of summer.
This drink is made with raw mango pulp, spices, herbs, and lemon juice. Blend to make a smooth mixture, then mix in chilled water with some cubes and serve, that’s how simple this aam panna is to make.
There are two ways to prepare this aam panna recipe: one with boiled mangoes and the other with roasted mangoes.
The first method starts with boiling unripe (raw) green mangoes in enough water until it reaches 4 to 5 whistles. After that, peel their skin and extract the pulp without seeds. Now, make a concentrate by adding mango pulp, sugar, mint leaves, black salt, cumin powder, and lemon juice to a blender jar. Blend all together until it becomes a smooth paste. Mix a spoonful of the mixture in a glass with water and serve.
The second method is to roast the raw mangoes on a direct flame until slightly soft. Same, extract the pulp and add to the blender jar with the same ingredients to form a smooth mixture. Adding the mixture with chilled water, and the aam panna is ready to drink.
Both methods work well, but I personally like the boiling method, which I share in this post. For a sharp and sweet flavor, try the boiling method, and for a smoky and subtle flavor, try the roasted method. Choose anyone according to your preference. Ingrdients
Mangoes- I have two medium-sized green unripe mangoes. Use any variety of mangoes that you have.
Water- For cooking mangoes.
Sugar- I have used white sugar, brown sugar, jaggery, maple syrup, sugarcane juice, all of which also work well.
Cumin powder- Use for better digestion. If you don’t have, add roasted cumin seeds to a jar while making the mixture.
Salt- I have used black salt, which works well for deep flavor.
Mint leaves- Using fresh leaves without stems adds freshness to the drink.
Lemon Juice- Used to add some extra tanginess.
Ice Cubes- To make the drink more chilled.
How to make aam panna recipe
1. Take 2 medium-sized raw mangoes in a bowl. Wash thoroughly in clean water for 2 to 3 times.

2. Now add them to a pressure cooker with 1.5 cups of water.

3. Close the cooker lid and pressure cook on high heat till 4 to 5 whistles. After that, turn off the flame.

4. When pressure drops, naturally open the lid, and the mangoes are soft and tender. If not, pressure cook for 1 more whistle.

5. Remove the boiled mangoes and drain excess water. When the mangoes are slightly cool, peel the skin and extract the pulp into a bowl.

6. Add the mango pulp to a blender jar.

7. Add 1/3 cup sugar, 1 tsp cumin powder, 2 tsp black salt, 1 tsp lemon juice, and 2 tbsp mint leaves.

8. Blend all the ingredients well and make a smooth mixture.

9. Now transfer the mixture or concentrate to a bowl. You can store it in an air-tight container in the refrigerator and use it for a month.

10. Now add 2 tbsp of concentrate and 2-4 ice cubes to a large glass.

11. Pour chilled water into it.

12. Mix well, and the homemade aam panna is ready.

Serve this raw mango drink chilled with mint leaves. Pair it with snacks like pakora and a sandwich. You can also enjoy it during lunchtime.
