Ingredients

  • 2 medium raw mangoes
  • cups water
  • cup sugar
  • 2 tsp black salt
  • 1 tsp cumin powder
  • 2 tbsp mint leaves
  • 1 tsp lemon juice

Instructions

  • Wash the raw mangoes in clean water 2 to 3 times.
  • Add them to a pressure cooker with 1.5 cups of water.
  • Cook them for 4 to 5 whistles on high heat, after that turn off the flame.
  • When the pressure is released, remove the boiled mangoes.
  • Let them cool, then peel their skin, remove the pulp in a bowl, and extract the seeds.
  • Add the mango pulp to a blender jar with sugar, mint leaves, cumin powder, black salt, and lemon juice.
  • Blend all the ingredients to make a smooth paste.
  • Transfer the mixture to a bowl.
  • Add 2 tbsp of the mixture to a large glass with some ice cubes.
  • Pour chilled water into it and mix well until it's combined.
  • Now garnish with fresh mint leaves and serve.

Notes

  • Use raw mangoes that are slightly sour for the best flavour.
  • Boil the mangoes until soft for easy extraction of pulp.
  • Blend the mixture smoothly without water for a better texture.
  • Store the aam panna concentrate in the refrigerator for quick serving.
