2 medium raw mangoes 1½ cups water ⅓ cup sugar 2 tsp black salt 1 tsp cumin powder 2 tbsp mint leaves 1 tsp lemon juice
Wash the raw mangoes in clean water 2 to 3 times.
Add them to a pressure cooker with 1.5 cups of water.
Cook them for 4 to 5 whistles on high heat, after that turn off the flame.
When the pressure is released, remove the boiled mangoes.
Let them cool, then peel their skin, remove the pulp in a bowl, and extract the seeds.
Add the mango pulp to a blender jar with sugar, mint leaves, cumin powder, black salt, and lemon juice.
Blend all the ingredients to make a smooth paste.
Transfer the mixture to a bowl.
Add 2 tbsp of the mixture to a large glass with some ice cubes.
Pour chilled water into it and mix well until it's combined.
Now garnish with fresh mint leaves and serve.
Use raw mangoes that are slightly sour for the best flavour.
Boil the mangoes until soft for easy extraction of pulp.
Blend the mixture smoothly without water for a better texture.
Store the aam panna concentrate in the refrigerator for quick serving.
