Churma is a famous sweet dish of Rajasthan, a northwestern Indian state, where it is called dal baati churma. It is specially prepared on the occasion of Makar Sankranti and Diwali there. This roti churma recipe comes especially from Haryana (famous for grains) and has now spread to Uttar Pradesh, too. It holds a unique place in the hearts of North Indian people, and I’m one of them.
In my home, no one is a big fan of this except my father and me. I don’t see this recipe being prepared at my home before I try. I found this recipe the best after many trials and errors. Now I make it the best way, I will share with you all today.
Difference between roti churma vs traditional churma
Roti churma and traditional churma are closely related Indian sweet dishes, but they are different in preparation and texture. Roti chruma is made by crumbling wheat rotis, usually slightly stale or leftover, and mixing them with ghee or jaggery, often with cardamom and a nut flavor. This version is quick, uses ingredients readily available at home, and has a soft, crumbly texture.
In traditional churma, especially the Rajasthani style, it is typically prepared by deep-frying coarsely ground wheat flour dough balls to a golden crisp, then crushing them and combining them with ghee and jaggery. Traditional churma has a richer, slightly crunchy texture and is considered more festive, often served at special occasions.
Essentially, the roti churma recipe is a simpler, home-friendly version of the traditional churma, making it a convenient and authentic sweet treat.
