Vrat Wale Aloo Recipe (Fasting Potato Curry)
This vrat wale aloo recipe is a quick and easy meal made of mashed boiled potatoes, tomatoes, and sendha namak. Perfectly pairs with kuttu ki puri, rajgira paratha, and even a bowl of simple curd.

- 4 medium boiled potatoes
- 1 tbsp ghee
- 1 tsp cumin seeds
- 1 tsp grated ginger
- 1 green chili, finely chopped
- 2 medium tomatoes puree
- 1 tsp rock salt (sendha namak)
- 1½ to 2 cups water
Mash all the boiled potatoes in a bowl or on a plate.
Heat ghee in a heavy-bottomed kadai.
Add some cumin seeds and let them sizzle for a few seconds.
When they are cracking, add ginger and green chili.
Saute them till the ginger is light golden.
Next, add tomato puree and saute till the ghee releases from its sides.
When ghee starts releasing, add the mashed boiled potatoes.
Mix them well with the tomato masala and saute till it absorbs the flavour.
After that, pour 1½ cups of water and salt into it.
Mix very well and cook it until the gravy thickens.
When the gravy thickens, turn off the flame.
- Boil the potatoes just until tender; avoid overcooking them.
- Adjust gravy consistency to your preference.
- Avoid stirring the potato curry too much while cooking.
- Add some coriander leaves and cumin powder for extra aroma.
