  • 4 medium boiled potatoes
  • 1 tbsp ghee
  • 1 tsp cumin seeds
  • 1 tsp grated ginger
  • 1 green chili, finely chopped
  • 2 medium tomatoes puree
  • 1 tsp rock salt (sendha namak)
  • 1½ to 2 cups water

Instructions

  • Mash all the boiled potatoes in a bowl or on a plate.
  • Heat ghee in a heavy-bottomed kadai.
  • Add some cumin seeds and let them sizzle for a few seconds.
  • When they are cracking, add ginger and green chili.
  • Saute them till the ginger is light golden.
  • Next, add tomato puree and saute till the ghee releases from its sides.
  • When ghee starts releasing, add the mashed boiled potatoes.
  • Mix them well with the tomato masala and saute till it absorbs the flavour.
  • After that, pour 1½ cups of water and salt into it.
  • Mix very well and cook it until the gravy thickens.
  • When the gravy thickens, turn off the flame.

Notes

  • Boil the potatoes just until tender; avoid overcooking them.
  • Adjust gravy consistency to your preference.
  • Avoid stirring the potato curry too much while cooking.
  • Add some coriander leaves and cumin powder for extra aroma.
