This poha recipe is an easy and quick breakfast or brunch. It consists of flattened rice, onion, tomatoes, peanuts, raisins, herbs, and lemon juice. The poha's taste is sweet and savory.

Ingredients
  

  • 1 cup Poha ( rice flakes)
  • 1 medium onion, finely chopped
  • 1 medium tomato, finely chopped
  • 2 green chili, finely chopped
  • 1 tbsp coriander leaves, finely chopped
  • ½ tsp salt or as per your taste
  • ¼ tsp turmeric powder
  • tsp mustard seeds
  • tsp cumin seeds
  • 1 tbsp mustard oil
  • 1 tbsp raisins
  • 1 tbsp peanuts (ground nuts)
  • 1 tsp lemon juice

Instructions
 

  • Take poha in a strainer or bowl and rinse it in clear water with your fingers two to three times. Then keep it aside and do not soak it in water for more than the rinsing time.
  • Then chop the onion, tomatoes, green chili, and coriander leaves into small pieces.
  • Heat a pan, add peanuts on a medium flame, and fry them until it has a brown shade on the outside.
  • When the peanuts have a brown shade outside, transfer them to a bowl.
  • Now, take the same pan, add 1 tbsp mustard oil with mustard and cumin seeds on medium heat. Let them sizzle for a few seconds.
  • Add chopped onions and allow them to roast until it has a golden texture outside.
  • When the onion has a golden texture, add chopped tomatoes. Now allow them to soften; it takes 3 to 4 minutes on medium heat.
  • When the tomatoes are softened properly then add turmeric and salt.
  • After that add soaked poha, raisins, peanuts, and green chili.
  • Mix all the ingredients well and garnish with chopped coriander leaves. Cook it for 3-4 minutes on medium flame.
  • Now turn off the flame and squeeze lemon juice on it.
  • Again, mix well. The poha is ready to serve.

Notes

  • When you rinse the poha, drain the excess water and set it aside immediately. Do not soak it in for more than the rinsing time, or else your poha would be mushy and sticky.
  • Always use medium-thick flattened rice.
  • If you don't have a strainer or are using a bowl, drain excess water at a time.
  • Add lemon juice to the poha after it cooks, and you are ready to eat. If you add lemon juice while cooking, your poha will have a sour taste.
  •
