One-Pot Lauki Halwa Recipe - Less Mess, More Flavour!

Lauki Halwa is one of those Indian desserts that turns a humble bottle gourd into something wonderfully rich and comforting. Made with grated lauki, milk, sugar, and crunchy nuts.

Ingredients
  

  • 1 cup grated bottle gourd
  • 2 cups full-fat milk
  • ½ cup sugar
  • 1 tbsp grated dry coconut
  • 1 tbsp chopped almonds
  • 1 tsp cardamom powder
  • 2-3 tbsp ghee

Instructions
 

  • Heat ghee in a kadai and add the grated bottle gourd.
  • Start sauteing them with a spatula until the raw smell is gone.
  • It takes 3 to 4 minutes to remove the raw smell of bottle gourd completely.
  • Now add the milk and heat it over a high flame until it comes to a boil.
  • When the milk comes to a boil, turn the flame low and keep cooking until the milk thickens.
  • Stir in between with a spatula so the bottle gourd doesn't stick to the bottom.
  • It takes 10 to 12 minutes for the milk to reduce properly with the bottle gourd.
  • Now add sugar and cook till the sugar dissolves.
  • When the sugar dissolves, add grated coconut, almonds, and cardamom powder.
  • Mix well and continue to cook until the ghee separates from the halwa.
  • When the halwa starts releasing ghee from its sides, turn off the flame.
  • Serve hot and garnish with your favorite nuts.

Notes

  • Choose fresh lauki for better texture.
  • Remove all excess water from the grated lauki.
  • Cook the milk with lauki until it is reduced and fully absorbed.
  • Along with almonds, add extra nuts.
