Meethe Jave Recipe (Traditional Rakshabandhan Sweet)

- 1 cup vermicelli (roasted/unroasted)
- 3 cups milk (homemade/full fat)
- ½ cup sugar
- 1 tbsp chopped almonds
- 1 tbsp chopped cashews
- 1 tbsp raisins
- 1 tsp cardamom powder
Heat the milk in a heavy-bottomed pan over medium heat.
Let the milk come to a boil, and when it comes, add the vermicelli.
Mix them well and simmer them on low heat until the vermicelli softens.
When the vermicelli is soft, add the sugar.
Mix well and simmer it until the sugar dissolves properly in the vermicelli.
When the sugar is fully absorbed, add all the chopped nuts.
Mix all the nuts and continue until a creamy consistency is achieved.
Lastly, add cardamom powder and turn off the flame.
- Adjust the sugar to your preferred sweetness.
- Stir at intervals while cooking to avoid sticking.
- After resting, the kheer thickens; reheat by adding milk.
- For extra richness, add your other favorite nuts.
