Dry Aloo Sabzi Recipe | Simple Indian Potato Stir Fry
Dry aloo sabzi (also known as sukhe aloo ki sabzi) is a simple, flavorful Indian potato stir-fry made with boiled potatoes, spices, and fresh herbs. This quick and easy recipe comes together in just a few minutes using basic pantry ingredients.

- 4 medium-sized boiled potatoes
- 1.5 cups water
- 1 tbsp ghee/oil
- 1 tsp cumin seeds
- ½ tsp coriander powder
- ½ tsp fennel seed powder
- ¼ tsp garam masala powder
- 1 tsp dried fenugreek leaves
- 1 tbsp chopped coriander leaves
- 2 chopped green chillies
- 1 tsp salt
Cook potatoes in a pressure cooker till 3 to 4 whistles. After that, release the pressure naturally.
When the potatoes cool, peel them.
Chop the potatoes into smaller pieces.
Heat 1 tbsp ghee in a pan with cumin seeds and let them sizzle.
Add coriander powder, fennel seed powder, and chopped green chili.
When the green chili starts to splutter, add chopped potatoes.
Then add garam masala powder, dried fenugreek leaves, and salt.
Mix all of these ingredients well. Cook for 3 to 4 minutes.
Lastly, add 1 tbsp chopped coriander leaves.
Mix all ingredients well and turn off the heat.
- Boil the potatoes until they are just tender. Don't overcook.
- Cut the potatoes into similar-sized pieces.
- Cook the potatoes on medium heat.
- Add fresh coriander leaves at the last to enhance the taste.
