Dry Aloo Sabzi Recipe | Simple Indian Potato Stir Fry

Dry aloo sabzi (also known as sukhe aloo ki sabzi) is a simple, flavorful Indian potato stir-fry made with boiled potatoes, spices, and fresh herbs. This quick and easy recipe comes together in just a few minutes using basic pantry ingredients.

Ingredients
  

  • 4 medium-sized boiled potatoes
  • 1.5 cups water
  • 1 tbsp ghee/oil
  • 1 tsp cumin seeds
  • ½ tsp coriander powder
  • ½ tsp fennel seed powder
  • ¼ tsp garam masala powder
  • 1 tsp dried fenugreek leaves
  • 1 tbsp chopped coriander leaves
  • 2 chopped green chillies
  • 1 tsp salt

Instructions
 

  • Cook potatoes in a pressure cooker till 3 to 4 whistles. After that, release the pressure naturally.
  • When the potatoes cool, peel them.
  • Chop the potatoes into smaller pieces.
  • Heat 1 tbsp ghee in a pan with cumin seeds and let them sizzle.
  • Add coriander powder, fennel seed powder, and chopped green chili.
  • When the green chili starts to splutter, add chopped potatoes.
  • Then add garam masala powder, dried fenugreek leaves, and salt.
  • Mix all of these ingredients well. Cook for 3 to 4 minutes.
  • Lastly, add 1 tbsp chopped coriander leaves.
  • Mix all ingredients well and turn off the heat.

Notes

  • Boil the potatoes until they are just tender. Don't overcook.
  • Cut the potatoes into similar-sized pieces.
  • Cook the potatoes on medium heat.
  • Add fresh coriander leaves at the last to enhance the taste.
