Rinse or soak the chana dal in a bowl with enough water for 4 hours.
After 4 hours, add to a pressure cooker with 1 cup of water over high heat.
Cook it for two whistles, then turn off the flame.
When the pressure is released, transfer the cooked dal to a strainer.
When all the water has drained and cooled, transfer to a mixing bowl.
Add salt, garam masala, amchur, green chili, and onion.
Mix all well, and the stuffing is ready.
Now add flour, salt, and ajwain in a separate bowl.
Mix well, then add water gradually and knead it into a smooth dough.
When the dough is ready, make some small balls.
From them, roll one ball into a small circle on the rolling board.
Put the chana dal filling on the rolled circle and close the edges well.
Now dust with some flour and roll gently into a round chapati.
Heat the tawa and add the rolled chapati.
After some seconds, flip it and apply ghee by covering its edges.
Then immediately turn it over and apply ghee to this side too.
Cook it from both sides until the golden flakes appear.
When they start appearing, remove them and repeat the process with the rest of the dough balls.
