Chana Dal Paratha Recipe (Lentil Stuffed Flatbread)

Dal Paratha is a whole wheat flatbread stuffed with chana dal (Bengal gram), spices, onions, and cooked until it creates a crispy outside. It's a super filling breakfast when paired with a cup of tea or a bowl of yogurt for a healthy lunch.

Ingredients
  

For Stuffing

  • ½ cup chana dal (soaked for 4 hours)
  • 2 cups water
  • 1 onion, finely chopped
  • 2 green chilies, finely chopped
  • ¼ tsp amchur (dried mango powder)
  • ¼ tsp garam masala
  • ½ tsp salt

For dough

  • 2 cups wheat flour
  • 1 tsp carom seeds (ajwain)
  • ½ tsp salt
  • water as needed

For roasting

  • desi ghee or any neutral oil

Instructions
 

  • Rinse or soak the chana dal in a bowl with enough water for 4 hours.
  • After 4 hours, add to a pressure cooker with 1 cup of water over high heat.
  • Cook it for two whistles, then turn off the flame.
  • When the pressure is released, transfer the cooked dal to a strainer.
  • When all the water has drained and cooled, transfer to a mixing bowl.
  • Add salt, garam masala, amchur, green chili, and onion.
  • Mix all well, and the stuffing is ready.
  • Now add flour, salt, and ajwain in a separate bowl.
  • Mix well, then add water gradually and knead it into a smooth dough.
  • When the dough is ready, make some small balls.
  • From them, roll one ball into a small circle on the rolling board.
  • Put the chana dal filling on the rolled circle and close the edges well.
  • Now dust with some flour and roll gently into a round chapati.
  • Heat the tawa and add the rolled chapati.
  • After some seconds, flip it and apply ghee by covering its edges.
  • Then immediately turn it over and apply ghee to this side too.
  • Cook it from both sides until the golden flakes appear.
  • When they start appearing, remove them and repeat the process with the rest of the dough balls.
