Paneer Lifafa Recipe

About Paneer Lifafa Recipe
Lifafa, meaning an envelope or pocket-like shape which is made with wheat flour dough. Packed with the filling of paneer, onion, spices, and herbs, then roast with ghee to its crispiness.
When I tried it first time, my reaction was like Wow! Actually, I am not familiar with this paneer lifafa recipe before. One day I saw it randomly on Pinterest, then I personally tried. My family’s reaction was also the same. They said it’s an amazing dish that they ever try.
My mother says you can make simple paneer paratha like aloo paratha instead of this lifafa. She feels both have the same taste, and paratha is simpler to make. But I feel that the parathas don’t have that crispiness like the paneer lifafa recipe. But she was happy that I made this dish and served her.
Mostly, this leafy green adds spinach for making it more nutritious. But I don’t like to add this to my lifafa. Without spinach, it also tastes too good. If you are more nutrition-conscious, you can easily add this. You can include even more veggies like cucumber and carrot.
This paneer lifafa recipe needs only basic ingredients which are easily available everywhere. It takes 30 to 40 minutes from scratch to prepare. So let’s go through a breakdown of the ingredients.
Ingredients
- Wheat flour- I used whole wheat flour homemade (chakki aata) here.
- Paneer- I used 250 g grated paneer here. You can also add little mozzarella cheese.
- Spices- Garam masala and chaat masala both are enough to make stuffing spicy.
- Green Chili- I used green chili here. If you are preparing for children, then use red chili instead.
- Herbs- Coriander leaves are good for giving an aromatic flavour to the filling.
- Ghee- I used homemade ghee here for roasting the lifafa. Clarified butter can also be used.
How to make Paneer Lifafa Recipe
Make dough
1. Take 2 cups of aata (wheat flour) in a platter or a large bowl.

2. Now add water little by little and knead it well to a soft and smooth dough.

3. When the dough is prepared, rest it 10-15 minutes.

Prepare Stuffing
4. Now grate the paneer with a grater in a mixing bowl.

5. Add chopped onion, green chili, and coriander leaves.

6. Season spices: 1/2 tsp garam masala, 1/2 tsp chaat masala, and 1 tsp salt or as required.

7. Mix all the ingredients well.

Make Aata Slurry
8. Now make an aata slurry to seal the lifafa. Take some aata in a small bowl.

9. Add water and mix well with a spoon to a thick paste.

10. The mixture should be thick enough to paste the lifafa like this.

Make Lifafa
11. Take some dough and make a ball of it. Place it on a rolling board and dust some flour on it.

12. Now roll it with a roller in an 8 to 9-inch diameter.

13. Place the paneer filling in the middle of the roti.

14. Now fold the two opposite corners of roti.

15. Now spread the aata slurry upon it with a spoon or brush.

16. After that, fold the two remaining sides and make an envelope.

Roast the lifafa
17. Heat a skillet/tawa on medium heat and spread some ghee on it.

18. Now place the lifafa on it and pour ghee all over its sides.

19. After a few seconds, turn it and again pour ghee another sides too. Press gently with spatula. Roast it from all sides till golden brown.

20. When the golden brown flakes have come, remove them. Repeat the process with the rest.

21. Place them on kitchen paper towels to absorb the extra ghee.

Serve this paneer lifafa recipe for breakfast with tomato sauce, green chutney, and yogurt. You can serve it with a cup of tea.

Paneer Lifafa Recipe
Ingredients
- 2 cups wheat flour
- 250 g paneer
- 1 chopped onion
- 2 green chili, finely chopped
- 1 tbsp chopped coriander leaves
- 1 tsp salt
- ½ tsp garam masala
- ½ tsp chaat masala
- ghee for roasting
- water for kneading dough
Instructions
- Start with taking wheat flour in a large bowl.
- By adding water knead it into soft and smooth dough.
- Now rest it for 15 minutes.
- Grate paneer in a mixing bowl.
- Add onion, coriander leaves, green chili, and spices: garam masala, chaat masala, salt.
- Mix all of these ingredients well.
- Now take some wheat flour in a small bowl. Add some water and whisk it into a thick paste.
- After that take a dough ball, dust some flour and roll it 8 to 9 inch diameter.
- Place the filling in middle of the roti.
- Fold the two opposite sides of it.
- Now apply some slurry with spoon or brush.
- Fold the reamining two sides like an envelope.
- Heat the griddle and spread some ghee on it.
- Place the envelope on it and pour ghee all over its sides.
- Roast it till golden brown color by turning the sides again and again.
- When the golden brown color has come remove it and serve it hot.
