Murmura Laddu | Puffed Rice Ladoo

About Murmura Laddu
Murmura laddu is also known by Pori Urandai in Tamil Nadu. It basically a traditional sweet dish of there. But it is also prepared across most of the states of India. Everyone enjoys it occasionally, or on normal days also.
Murmura, or in English, we say puffed rice. This puffed rice ladoo is very easy to prepare with only two basic ingredients: puffed rice and jaggery syrup. This laddo is very light to eat in comparison to other laddos.
In my childhood, we often ate these murmura laddu. In my village, there was a shop where my friends and I went to shop and eat this laddu daily, which cost only 1 Rs at that time. There was a fun to eating this amazing sweet dish. Its crunchy taste gives more satisfaction than other laddos. We were enjoying this sweet dish very much till now.
This puffed rice laddo serves as an occasional treat, like Diwali, Holi, birthdays, picnics, or you can eat it as an evening snack. It is a very light, crisp, and delicious ladoo to make at home that needs only a few minutes. Me and my baby brother likes it so much.
I use puffed rice here; flattened rice can also be used for this recipe. But the quantity of jaggery reduces when we make it with flattened rice. Jaggery is the best option to make a perfect ladoo. Most people use regular sugar. But I prefer jaggery as a healthier option to make this murmura laddu.

How to make Murmura Laddu
Roast Puffed Rice
1. First take the puffed rice in a pan or a kadai on a medium heat. Roast it until it’s crispy. Stir them continuously so that they do not stick to the bottom of the pan.

2. When the puffed rice is crisp in texture then turn off the heat. It takes only 2 minutes to roast. Now keep them aside.

Make Jaggery Syrup
3. Now, in the pot or kadai, take jaggery, or you can take jaggery powder with 1/2 cup of water on medium heat.

4. Heat it until the jaggery melts completely in water. Stir it continuously with a spoon.

5. Then, continuously heat and wait until the syrup has thickened in texture.

6. Now, check the consistency of the syrup. Drop the syrup into a bowl and wait for the syrup to freeze. If it does, then turn off the heat of the syrup.

Make Murmura Laddu
7. Now, take the puffed rice in a platter or bowl with jaggery syrup.

8. Mix both ingredients well. So the puffed rice is coated well with jaggery syrup.

9. Now, make the ladoo by greasing your hands with water or ghee.

10. Now serve the murmura laddu to your loved ones!

Tips
- For making this laddu, consistency is very important. It should be a thick jaggery syrup.
- When you make the laddu, the jaggery syrup should be warm. If it cools down, perfect laddoos will not be possible.
- You can store these murmura laddu in an air-tight container at room temperature for a few weeks.
