This quick one-pot veg pulao is healthy and filling dish loaded with fresh vegetables and aromatic spices. Perfect for lunch and dinner.

1 cup basmati rice 1 potato  1 carrot, diced 1/2 cup peas 1 onion, chopped 4-5 garlic cloves 2-3 green chilies 2 tbsp oil 1 tsp cumin seeds 1 bay leaf 1/2 tsp turmeric powder 1 tsp salt 2 cups water

Wash rice 2-3 times in clean water and soak them for 15 minutes. Chop all the vegetables.

Heat oil in a cooker. Add cumin seeds and whole spices. Let them crackle.

Add chopped vegetables. Saute for 2-3 minutes. Add salt and turmeric.

Add soaked rice and water. Mix, cover , and cook till 1 whistle. For pan 10-15 minutes.
